Brunch Fritters with Lamb Strips & Salsa

Brunch Fritters with Lamb Strips & Salsa (Serves 3 to 4)

1 ½ cups whole kernel sweet corn
½ cup flour
1 teaspoon baking powder
2 eggs
1 tablespoon sweet chilli sauce
½ teaspoon salt
pepper
½ cup milk
475g packet Aria Farm Lamb Strips
300g jar tomato salsa

Mix corn, flour, baking powder, eggs, chilli sauce, salt, pepper and enough milk to make a thick batter. Grease a frying pan with butter. Cook ¼ cupful lots of mixture in the pan until bubbles appear. Turn and cook the other side. Cook Aria Farm Lamb Strips according to stove top packet directions. To serve, place two fritters on a plate, top with Aria Farm Lamb Strips and salsa
